Our Hoshigaki are made from hand-selected Hachiya persimmon, a variety treasured for its honeyed depth and custard-like sweetness when fully ripened. Each persimmon is carefully peeled and hung to dry in the traditional Japanese method known as Hoshigaki. Over several weeks, the fruit slowly concentrates under open air and gentle hand-massaging, allowing natural sugars to bloom on the surface like a soft frost.
The result is a jewel of the harvest: amber-glowing fruit with a delicate sugar bloom, silky interior, and a flavor that unfolds in layers of apricot, date, and wildflower honey.
